Healthy choc peanut dream


In the name of progress this recipe is inspired by My Dad’s favourite chocolatey junk food, this recipe was my attempt to help Dad enjoy his flavour favourite treats in healthier styles & see how treats can be delicious AND nourishing to his physiology at the same time.

Ingredients:

6 Dates

1 Tsp coconut oil

Vanilla essence/paste/powder

Salt

Fresh peanuts (unsalted)

Peanut butter

Dark chocolate 85%

How to:

Step 1: Layer 1. Lightly grease a baking tray with a small amount of coconut oil

Step 2: Blend 6 dates, 1 teaspoon of coconut oil, 1/4 teaspoon of vanilla essence, a sprinkle of sea salt in a food processor

Step 3: Place the blended dates onto your tray and fill out an even flat layer in any shape (mine was a circle like a pizza)

Step 4: Layer 2. Spread a layer of peanut butter on top of the dates gently.

Step 5: Layer 3. Sprinkle some peanuts over the top of the peanut butter

Step 6: Layer 4. Premelt the dark chocolate in a pan on low heat. As soon as it’s melted, start drizzling on top of the peanut butter layer until fully covered.

Step 7: Store in the fridge overnight

Step 8: Slice and enjoy. Take care because the bottom is sticky it won’t always slide off the pan easily, you might need a flat spatula underneath the date layer and to slowly pull the piece off the pan.

Enjoy with a cup of tea and your loved ones or solo over a nice comedy special : )
