Mixed Berry Chia Seed Jam

In the spirit of recently experimenting with making my own Gluten free Sourdough during this chilly Sydney Winter, it was only fitting to include some nourishing berry Jam in the mix. This recipe is quick and simple.


2 teaspoons lemon juice

6 tablespoons of chia seeds

1 cup of frozen mixed berries

3 teaspoons xylitol

How to:

In a saucepan, heat the cup of frozen berries with 2 tablespoons of water.

Once warm, add 2 teaspoons of lemon juice and 3 teaspoons of xylitol and stir until xylitol dissolves. Taste and if it needs more sweetness add more.

Turn off the heat and pour the mixture into a stainless steel bowl or a blender friendly bowl

With a hand blender, blend the ingredients together

Add 6 tablespoons of chia seeds and stir well

Pour the mixture into a jar and freeze overnight & viola! You have your chia seed Jam : )
