Mariam’s Ultra simple Chicken Soup.Dairy free . Gluten free . Keto . Low carb . Paleo . Refined sugar free
This recipe is simple, delicious and belongs to my amazingly beautiful and talented sister.
Mariam’s Chicken soup ingredients:
1 whole chicken
2 sprigs of cinnamon
3 bay leaves
3 pieces of star anise
1 bulb garlic (I know, it’s a lot – worth it)
1 large onion
SALT & Pepper
Step 1: In a large pot place a chicken in the pot and fill the pot with water enough to cover the chicken by 1 inch.
Step 2: Loosely chop the onion, peel and chop 1 whole bulb of garlic. (remove and discard the peels from both). Add to the pot
Step 3 : Add the cinnamon, star anise & 3 bay leaves to the pot.
Step 4: Cook on medium – high heat for 20 minutes or until the mixture starts to gently bubble, then reduce the temperature to a simmer for 1 hour.
Season with salt (you’ll need more than you think but start with 1/2 a teaspoon and sprinkle gradually, keep tasting before you add more to build the salt to your liking) + pepper.
This makes for a great base for:
Oriental inspired soup – by adding soy sauce, chopped ginger and chilli.
