Cauliflower Mash.

This one is relatively simple. Winter friendly warming & delicious. Let’s dive straight into it 🙂

Ingredients

1/2 cauliflower head (I used a small one)

4- 6 cloves of Italian Garlic (because you measure garlic with your heart, not logic)

1/2 teaspoon of sea salt

2 heaped teaspoons of Fresh thyme leaves

1 tablespoon of salted butter

1/2 cup of bone broth or chicken stock. Check out my bone broth recipe here! 

4 teaspoons of pimp my salad cashew parmesan, or you can use real parmesan.

How to do it:

Step 1: Chop the cauliflower and discard the stalks as much as possible then blitz the cauliflower in a food processor

Step 2: bring the blitzed cauliflower to the boil on a saucepan with just enough water to cover.

Step 3: Once at boiling point, Boil for 10 minutes then drain when the cauliflower is soft.

Step 4: Drain the cauliflower of water then add back into the saucepan

Step 5: Flavour time. Add the butter, garlic and lightly sautée for 1 minute.

Step 6: Add there thyme, stock, cashew parmesan and salt and switch off the stove. Use a hand blender to blend the ingredients. If you want it extra yummy I add 2 teaspoons of Plantasy foods creamy cheez sauce mix.

Wear your wooliest comfiest socks , baggiest jumpers and oldest beanies, snuggle up  and enjoy. This dish would work well to replace anything where you would ordinarily have a side of mashed potato.
