Fennel Rose Panna Cotta


 

It’s midnight on the 24th of May 2020. Today is an Islamic celebration: Eid Al Fitr.

Muslim sisters & brothers all around the world will gather with their families to celebrate the Holy Month of Ramadan that has just come to a close. This day will be filled with celebration, family & community values that represent the peaceful essence of Islam. Every Eid as a child is a cherished memory spent at Teta & Giddo’s.

I will be posting about my experience fasting in the last month & the enormous physical, emotional & spiritual benefits that the last 30 days have provided. We’ll save this for another day. A day where we can delve more into the science of fasting.

Today’s post is about dessert & nostalgia in the spirit of celebration.

Here is the recipe for my Fennel Rose Panna Cotta. Please be advised that It’s not very sweet, and a very light dessert. You may want to add extra sweetness. I personally prefer my desserts not overpoweringly sweet. But try it anyway as you go and tweak as your taste buds prefer.

This is great for your gut health too!

Ingredients:

2 cinnamon sticks (or 1/2 teaspoon of cinnamon powder)

15 mls Rosewater

1 can coconut milk

1 Tablespoon of Gelatin powder. I use Halal certified Gel Pro Australia Gelatin

1.5 teaspoons of vanilla paste or essence

3 level tablespoons of xylitol (Even though I advocate sugar free – practically speaking sugar or honey might also work if that’s what you have at home)

2 teaspoons of fennel seeds

Optional Garnish 

  • Pistachios
  • Rose Petals
  • Fennel Seeds

Instructions

Helpful Tip! Keep at very low heat. Avoid bringing to the boil at any point as this can affect the way the pudding sets (learnt this the hard way)

1 – On low heat, add 1/2 cup of coconut milk to a saucepan and sprinkle gelatine in. Leave gelatine to ‘bloom’ for a few minutes then whisk the two together.

2 – Add the remainder of the coconut milk + all ingredients

3- Whisk on low heat for a few minutes

4  – Pour contents into small serving bowls of your choice and leave to cool for 20 minutes

5 – Set in the fridge overnight

6 – Garnish to your hearts content
