Valentines Paleo Strawberry Brownie cakes

Brace yourselves. This is Sugar free, Gluten free, Paleo, Low carb, high fibre & mighty goodness.
Ingredients: Makes 12
- 2.5 cups almond meal
- 1/2 teaspoon of baking powder
- 1/2 cup of almond milk
- 3- 4 tablespoons of xylitol
- 2 tablespoons of melted butter
- 3 tablespoons of cacao
- 6 finely chopped strawberries
- 1 egg or Chia egg
- 1 teaspoon vanilla essence
- 1/2 teaspoon of cinnamon
Instructions: Preheat the oven to 170 degrees.
Step 1: Mix the dry ingredients together first – Almond meal, baking powder, cacao, cinnamon, xylitol
Step 2: Combine the wet ingredients – Egg, Vanilla, Strawberries, Butter, Almond Milk – Hand mix everything with a wooden spoon or spatula.
Step 3: Line a cupcake tray with cupcake shells and pour the batter in to about 3/4 of the way.
Leave in the oven for 20 – 30 minutes. Then serve & enjoy!
To decorate: You can use 1/2 teaspoon of coconut flour through a siv + 1/2 teaspoon of cacao to give it that icing sugar/ chocolate look. You can also garnish with berries too.
