Salted Peanut butter choc chunk slice

Scouring the pantry for some chocolate the other day, knowing I only keep healthy foods at home, I set myself a challenge to use only what was already in the pantry, to bake a treat equal parts naughty and nice. A personal favourite balance 😉

The amazing thing about this was, it was super easy, and took less than 5 minutes. Because… priorities. * eyebrow raise

This challenge was made particularly complicated by the fact that I’m currently not eating eggs or milk – those essentially staple foundations for baked goodies. I had to get crafty, and it turned out vegan and free of processed nasties.

Prep time: 5 minutes

Cooking time: Depends on your oven. Monitor at 160 – 170 degrees

Ingredients 

1 cup of almond meal

2 tablespoons of cacao

75g coconut oil for vegan, butter for non-vegan.

1-2  tablespoons of chia seeds

3/4 can of coconut milk

1 teaspoons of baking powder

2 tablespoons of honey

2 heaped tablespoons of unsalted peanut butter. Only add a pinch of salt if the peanut butter is freshly ground.

1 heaped tablespoon of tapioca flower – otherwise it’s too dense.

Optional for extra gut healing : 1 tablespoon of food grade heal your gut powder. Diatomaceous Earth. If you have this in your pantry already. No need to buy. 

Instructions: Grease a brownie pan with some coconut oil and pour the blended ingredients and place in the oven until you are happy. I hand blend with a wooden spoon old school ethnic style but you can use a food processor if you are particularly crafty.  😉

Bonus tip: Taste the batter before using. Add extra honey if you need to if it’s not sweet enough for your liking.
