Lemon Macadamia Snowball


This beauty was inspired by an old lemon vegan cheesecake recipe I made but needed something more portable to suit busy weeks. It was quick to make, easy to store and a nourishing work snack. As an option you can add collagen powder to this blend to add some extra protein.

Ingredients:

1 tablespoon of fresh lemon juice

2 tablespoons of maple syrup (add more if you need extra sweetness but I didn’t think it was needed)

2 tablespoons of dessicated coconut

Sea salt (a sprinkle)

3/4 – 1 cup macadamia nuts

1/4 teaspoon of Vanilla extract/paste/powder

Method:

Step 1 – Blend all of the above ingredients into a food processor: The lemon juice, maple syrup, macadamia nuts, vanilla, sea salt (a sprinkle), dessicated coconut.

Step 2 – Add 2 tablespoons of dessicated coconut to a plate to roll Balls.

Step 3- Using a piece of the paste, roll piece into 3cm balls with your hands and then roll the ball onto the dessicated coconut on the plate.

Step 4 – Set the ball aside and repeat until paste is finished.
