Apple Rhubarb Crumble

Gorgeous.
This Apple Rhubarb crumble recipe was born out of being inspired by some fresh rhubarb at the organic markets. I had no idea how to use rhubarb or what it tasted like until I made this. After being keto for 6 months without fruit (except berries) I was ready to introduce fruit again in a spectacular way.
Coming into the winter months in Australia, (although we are blessed with weather and can barely call it a grizzly winter) – I’ve accepted the fact that I’m a traditional Aussie gal built for the summer sun.
While I’m waiting for summer playtime, Winter is an opportunity to deeply nourish nutritionally and I spend hours in the kitchen playing around with ingredients.
This apple Crumble would probably suit a 15- 17cm cake dish, but you can customise the ingredients depending on the size of your oven proof dish.
Ingredients:
Base:
1 teaspoon of vanilla extract
2 teaspoons of cinnamon
2 Fresh rhubarb sticks – chopped
4 red delicious apples – chopped
2 tablespoons of Butter
2 teaspoons of Xylitol
Crust:
6 heaped tablespoons of Almond Meal
2 tablespoons of Coconut flour
1/2 – 1 teaspoon of honey for flavour
3/4 teaspoon of Cinnamon
3 tablespoons of melted butter
Garnish – Optional – Coconut yoghurt plain and/or toasted coconut flakes.
Instructions:
Preheat the oven to 180 degrees Celsius
Step 1 : To make the base, begin by melting 2 tablespoons of butter in a saucepan on medium heat.
Step2: Once the butter is melted on medium heat, add the chopped apples, rhubarb, cinnamon, vanilla and xylitol. Stir occasionally until the apple softens.
Step 3: Pour the base ingredients into your oven proof dish to form an even base
Step 4: Make the crust by mixing 6 heaped tablespoons of almond meal, 2 tablespoons of coconut flour, 1 teaspoon of honey, 3/4 teaspoon of cinnamon, 3 tablespoons of melted butter – mix with clean hands to really combine the ingredients and put some love in there. 😉
Step 5: Sprinkle the crust on the top of the base, layer evenly.
Step 6: Place in the oven. You’ll know it’s done once the top has a light golden brown crust.
Enjoy with coconut yoghurt plain or toasted coconut flakes.. but it’s so yummy on it’s own it needs neither!
